Instructions:
Preheat your oven to 400°F (200°C) and grease a muffin tin.
In a large bowl, combine mashed potatoes, egg, cheddar, Parmesan, green onions, and seasonings.
Scoop about 2 tablespoons of the mixture into each muffin cup and press it up the sides to form a nest shape.
