Ingredients

  1. 3–4 lb pork loin roast
  2. 4 cloves garlic, minced
  3. 2 tbsp olive oil
  4. 1 tsp salt
  5. ½ tsp black pepper
  6. 1 tsp dried rosemary
  7. 1 tsp dried thyme
  8. ½ tsp paprika
  9. 1 tbsp Dijon mustard (optional)
  10. 1 cup chicken broth
  11. 1 onion, sliced (for pan roasting)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, garlic, salt, pepper, rosemary, thyme, paprika, and Dijon mustard into a paste.
