My grandma used to roast fresh tomatoes over the flame and blend them with herbs from her garden. This version brings that same flavor with a quicker twist, using canned fire-roasted tomatoes for convenience but still capturing that rustic charm.

Ingredients:

  1. 2 tbsp olive oil
  2. 1 medium onion, chopped
  3. 3 garlic cloves, minced
  4. 2 cans (14.5 oz each) fire-roasted diced tomatoes
  5. 1 tbsp tomato paste
  6. 2 cups vegetable or chicken broth
  7. 1 tsp dried basil
  8. ½ tsp oregano
  9. Salt and black pepper to taste
  10. ½ cup heavy cream (optional for richness)
  11. Fresh basil or croutons for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
  2. Stir in garlic and cook for 1 minute.
  3. Add fire-roasted tomatoes, tomato paste, broth, basil, oregano, salt, and pepper. Simmer for 20 minutes.
  4. Use an immersion blender (or transfer to a blender) to puree the soup until smooth.
  5. Stir in cream and heat through, but do not boil.
  6. Serve hot, topped with fresh basil or croutons.
