My grandma used to roast fresh tomatoes over the flame and blend them with herbs from her garden. This version brings that same flavor with a quicker twist, using canned fire-roasted tomatoes for convenience but still capturing that rustic charm.
Ingredients:
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 cans (14.5 oz each) fire-roasted diced tomatoes
- 1 tbsp tomato paste
- 2 cups vegetable or chicken broth
- 1 tsp dried basil
- ½ tsp oregano
- Salt and black pepper to taste
- ½ cup heavy cream (optional for richness)
- Fresh basil or croutons for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
- Stir in garlic and cook for 1 minute.
- Add fire-roasted tomatoes, tomato paste, broth, basil, oregano, salt, and pepper. Simmer for 20 minutes.
- Use an immersion blender (or transfer to a blender) to puree the soup until smooth.
- Stir in cream and heat through, but do not boil.
