Ingredients:

  1. 5–6 medium yellow squash, sliced
  2. 1 small onion, chopped
  3. 2 tablespoons butter
  4. 1 cup shredded cheddar cheese
  5. 1/2 cup sour cream
  6. 1/2 cup mayonnaise
  7. 2 large eggs, beaten
  8. 1/2 teaspoon garlic powder
  9. Salt and black pepper to taste
  10. 1 sleeve Ritz crackers, crushed
  11. 2 tablespoons melted butter

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Boil squash and onion in salted water for about 8–10 minutes until tender. Drain and mash lightly.
  3. In a large bowl, mix squash and onion with sour cream, mayonnaise, cheese, eggs, garlic powder, salt, and pepper.
  4. Pour into a greased baking dish.
  5. Combine crushed Ritz crackers with melted butter and sprinkle evenly over the casserole.
