- 5–6 medium yellow squash, sliced
- 1 small onion, chopped
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 large eggs, beaten
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 sleeve Ritz crackers, crushed
- 2 tablespoons melted butter
Instructions:
- Preheat oven to 350°F (175°C).
- Boil squash and onion in salted water for about 8–10 minutes until tender. Drain and mash lightly.
