Chicken Potato Rolls

Chicken Potato Rolls – Crispy on the Outside, Creamy and Flavor-Packed Inside!

These Chicken Potato Rolls are a family favorite that disappear the moment they hit the table. They’re golden, crunchy on the outside, and filled with a delicious mix of seasoned chicken and mashed potatoes inside. Whether you’re serving them as a snack, side dish, or party appetizer, they’re always a hit!

A few years ago, I made these for a gathering, thinking they’d be just another savory finger food. But once everyone took their first bite, they were hooked—and now I’m asked to bring them to every family event. The soft, creamy filling wrapped in a crisp, pan-fried shell is downright addictive.

Ingredients:

  1. 2 cups cooked, shredded chicken
  2. 2 cups mashed potatoes (preferably cooled)
  3. 1 small onion, finely chopped
  4. 1/2 teaspoon garlic powder
  5. 1/2 teaspoon black pepper
  6. 1/2 teaspoon salt (adjust to taste)
  7. 1/2 teaspoon paprika
  8. 1 tablespoon chopped parsley (optional)
  9. 1/2 cup shredded cheddar cheese (optional)
  10. 1 egg
  11. 1 cup breadcrumbs (for coating)
  12. Oil for shallow frying

Instructions:

  1. In a large bowl, combine shredded chicken, mashed potatoes, onion, garlic powder, salt, pepper, paprika, parsley, and cheese. Mix well until fully combined.
  2. Scoop out portions and shape into oval rolls or cylinders using your hands.
  3. Beat the egg in a bowl. Dip each roll in the egg, then coat with breadcrumbs.
  4. Heat oil in a frying pan over medium heat. Shallow fry the rolls until golden and crisp on all sides, about 2–3 minutes per side.
  5. Remove and place on paper towels to drain excess oil. Serve hot with ketchup, ranch, or your favorite dip.
