Chicken and Rice Soup – Warm, Hearty & Just Like Grandma Made!

When I was little, my grandmother would make this soup whenever anyone was sick—or just needed a little love. I’ve carried that tradition with me, and now this recipe is one of my go-tos when life calls for something cozy and satisfying.
Ingredients:
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1½ cups cooked chicken (shredded or chopped)
- ¾ cup long-grain white rice (uncooked)
- 1 tsp dried thyme
- ½ tsp black pepper
- Salt to taste
- 2 tbsp fresh parsley, chopped (optional)
- Juice of ½ lemon (optional, for brightness)
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Sauté for 5–6 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add chicken, rice, thyme, pepper, and salt.
- Reduce heat, cover, and simmer for 20–25 minutes or until rice is tender.
- Stir in parsley and lemon juice if using.
- Taste and adjust seasoning. Serve hot.
