Chicken and Rice Soup – Warm, Hearty & Just Like Grandma Made!


Tender chicken, soft rice, and vegetables simmered in a flavorful broth—this comforting bowl is like a warm hug on a cold day. It’s a timeless classic that fills you up and soothes your soul.

When I was little, my grandmother would make this soup whenever anyone was sick—or just needed a little love. I’ve carried that tradition with me, and now this recipe is one of my go-tos when life calls for something cozy and satisfying.

Ingredients:

  1. 2 tbsp olive oil
  2. 1 small onion, chopped
  3. 2 carrots, sliced
  4. 2 celery stalks, chopped
  5. 3 garlic cloves, minced
  6. 6 cups chicken broth
  7. 1½ cups cooked chicken (shredded or chopped)
  8. ¾ cup long-grain white rice (uncooked)
  9. 1 tsp dried thyme
  10. ½ tsp black pepper
  11. Salt to taste
  12. 2 tbsp fresh parsley, chopped (optional)
  13. Juice of ½ lemon (optional, for brightness)

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5–6 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add chicken, rice, thyme, pepper, and salt.
  6. Reduce heat, cover, and simmer for 20–25 minutes or until rice is tender.
  7. Stir in parsley and lemon juice if using.
  8. Taste and adjust seasoning. Serve hot.
