Ingredients:

  1. 4 medium potatoes, peeled and thinly sliced
  2. 2 tablespoons butter
  3. 2 tablespoons olive oil
  4. 1 small onion, finely chopped
  5. 2 garlic cloves, minced
  6. 3 cups fresh spinach, chopped (or 1½ cups frozen, thawed and drained)
  7. ½ cup milk or cream
  8. 2 eggs, beaten
  9. 1 cup grated parmesan cheese
  10. 1 teaspoon salt
  11. ½ teaspoon black pepper
  12. ¼ teaspoon nutmeg (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
  2. In a skillet, heat butter and olive oil. Add onion and garlic, sauté until soft.
  3. Stir in chopped spinach and cook until wilted (or heated through if using frozen).
  4. In a bowl, combine milk, eggs, salt, pepper, nutmeg, and half of the parmesan.
  5. Arrange half of the sliced potatoes in the bottom of the dish. Pour half the spinach mixture over them.
  6. Repeat with remaining potatoes and spinach.
  7. Pour the milk and egg mixture over the top, pressing slightly to distribute evenly.
  8. Sprinkle with remaining parmesan.
  9. Cover with foil and bake for 40 minutes. Uncover and bake 15–20 minutes more, or until golden brown and set.
  10. Let it rest for 10 minutes before slicing and serving.
