Ingredients:
- 4 medium potatoes, peeled and thinly sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 3 cups fresh spinach, chopped (or 1½ cups frozen, thawed and drained)
- ½ cup milk or cream
- 2 eggs, beaten
- 1 cup grated parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg (optional)
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
- In a skillet, heat butter and olive oil. Add onion and garlic, sauté until soft.
- Stir in chopped spinach and cook until wilted (or heated through if using frozen).
- In a bowl, combine milk, eggs, salt, pepper, nutmeg, and half of the parmesan.
